Homemade Almond Milk

Do you like to enjoy alternative “milks” in your daily diet? Here is a simple recipe for homemade, fresh almond milk to use instead of the processed bottled variety. Use raw almonds – do not use roasted almonds. Almonds contain 25% of your daily calcium needs and 20% of your daily iron needs.


Ingredients: 1/4 cup Raw Almonds Water


Directions:

  1. To blanch raw almonds: Boil one inch of water in a pan. Add almonds and allow to boil for 30 seconds. strain. Peel the skins off.

  2. Place blanched almonds in blender. Add 1 cup of water and blend on high speed for 1 to 2 minutes.


Keep the pulp in to retain all of the nutritive benefits of the almonds. Or to make your milk more like store bought, strain by pouring almond milk through cheese cloth or fine sieve. Store covered in refrigerator for up to one week or freeze for one month.
